CAPUNTI with TRICOLOR PEPPERS SAUCE by Antonette Pizzolla
Ingredients:
1 and a half ounce can of pelati (peeled tomatoes )
3 mini orange pepper cleaned with seeds removed
3 mini yellow peppers cleaned with seeds removed
3 mini red peppers cleaned with seeds removed
1 Vidalia onion chopped
Fresh basil chopped – about 6 leaves
Salt , pepper , 2 cloves of garlic chopped
3 tablespoons extra virgin olive oil
In a sauce pot add the extra virgin olive oil , add the chopped Vidalia onion and sauté fur 10 mins , in a blender add all the mini peppers and the can of pelati and chopped basil until all chopped and add to sauce pot with onions , add salt and pepper to taste and cook on low heat for about 1 hour. Boil water for capunti shape pasta or your favorite pasta and cook al dente mix with sauce and add yr favorite cheese preferably parmiggiano reggiano or ricotta salata ! Fast, quick and delicious!
